The fact that some choose to appear male and some choose to appear female is just to make it easier for our mortal minds to comprehend them. They don't reproduce in the same way that we do, so gender is less relevant when referring to them. Is that accidental there, or is the portly man really a she? If you follow the link to the Daggerfall artifacts page ( here), under the description of Sanguine, it says she. 15 "In all, there are 16 known Princes, including one which assumed the role of two.".
